Black Pepper is produced from the green unripe berries of the Pepper plant (Piper nigrum Linn), and is the resultant dried whole fruit. Our Black Pepper has a high Piperine content (the alkaloid responsible for the pungency of Black Pepper), and is widely used as a " hot" cooking spice and seasoning. Extracts of black pepper (piperine, oleoresin and essential oil) are also extracted from whole berries, and have uses as both spice and flavoring agents in the food industry, and also industrial uses in perfumery and the pharmaceutical industries. White pepper is produced by removing the outer pericarp of high density berries. Both black and white pepper are available in both whole and powder forms.
Cloves are the aromatic dried unopened whole flower buds of Eugenia caryophyllus C. Sprengel/Bullock and impart a strongly aromatic fragrance along with a fiery taste. Cloves are used in a variety of food preparations as well as in Ayurvedic / Chinese medicine, and dentistry where the essential oil (extracted from the clove leaf) is used as a painkiller for dental emergencies. Clove stems for use in the flavour and essential oil industries are also available.

Cinnamon is sold in many grades. The highest grade is sold in the form of Quills, which are several peels joined together by overlaps, the hollow of which has been filled with small pieces of the same peel. Quills are sold in four different grades (Alba, Continental, Mexican and Hamburg) depending on the diameter of the rolled quills.
Black lemon is a spice used in Middle Eastern dishes. It is made by boiling fresh lime fruits in salt water and sun drying until the insides turn black. The outside color varies from tan to black. Dried lime is sold whole or ground.
Dried limes are usually used in legume, seafood or meat dishes. They are pierced, peeled or crushed before adding them to the dish. After cooking they become softer and edible. They can also be powdered and added to rice dishes. Powdered black lime is also used as an ingredient in Persian Gulf-style baharat (a spice mixture which is also called kabsa or kebsa). It is a traditional ingredient of Arabic and Persian cooking.
